Dear Mark , a thousand apologies for the delay in sending this e-mail to you. I just wanted to say how much I enjoyed my Italian cooking holiday week in Sabina. It was a fantastic Italian cookery holiday and provided the perfect mix of cooking classes, eating, wine/olive tasting and culture! I think however it was the personal touch, attention to detail and excellent organisation on your part that really made the holiday special.The Sabina region is high on my list of places to return to.

LA TORRETTA CASPERIA
The La Torretta is one of the venues on the Italian cooking holiday , it is a beautifully restored 15c Palazzo in the historic center of the Medieval hilltop village of Casperia . Originally a Roman noble family house , it was completely restored 14 years ago back to its former glory.
All the beautiful rooms are en-suite and lead onto the Frescoed private guest lounge on the first floor , here guests can relax and feel immediately at home in very comfortable surroundings. You can spend your days relaxing on the wonderful terrace and enjoying the views, and soaking up the atmosphere of Casperia and the unspoilt local hilltowns and mountains which make up the Sabina area. Breakfast is served on the terrace or in the beautiful dining room .
There is a lovely private swimming pool available to guests just 5 minutes away.

SANTO PIETRO
The country hotel Santo Pietro is the other venue for the Italian cooking holiday . it lies 8 minutes outside of Fara Sabina and is situated amidst olive trees , vines and orchards , it was built by the Benedictine monks of nearby Farfa abbey on top of pre-existing Roman ruins in the middle ages. The building, long served as the first line of defence for one of Europe's most powerful abbeys over the last 200 hundred years, has been tranformed into what we see today, a fine restored country house with a 1st class restaurant - all rooms are mostly en-suite and are furnished simply but to a high standard.
Santo Pietro has a fine restaurant and reputation where people come from miles around to taste its freshly prepared local produce.
