Dear Mark , I feel that I have one foot back in Dublin and the other in Sabina. It really was one of the best holidays that I have ever been on. I loved everything about the cooking holiday - except coming home!
Every day surpassed the previous one and each day individually was so unique: the location, the locals, the sunshine, the food, the wine. We didn't have a dull moment - of course, with Pauline (Delisha!) that would have been impossible!!

We were also so fortunate in the company we had - a motley crew - that gelled from the first night over our Welcome Dinner.

So thank you for such brilliant organisation and for ferrying us - without complaint - here, there and everywhere. We were very well looked after.

FRIDAY : Is arrivals day for our long cooking weekends and the 5 day Cooking holiday. Have that glass of Prosecco or fine wine as we meet for the welcome dinner.


SATURDAY : Spend the morning soaking up and immersing yourself in the atmosphere of this special place that is Casperia . Lose yourself in the nooks, crannies and alleyways of this traffic free Medieval hilltop village.
Late afternoon we have our first lesson with the delightful Genni and her team in the wonderful kitchen of the La Torretta. We go through a complete italian dinner , from antipasti to dolce with fresh pasta and everything in between.

Dinner will be the fruits of your labour and hopefully if its warm ( it generally is ! ) taken under the stars on the fantastic terrace overlooking the Sabina countryside.



SUNDAY : Second lesson is a morning lesson taken at the Gusto al Borgo with Paula , Franco and Gianni. This lesson taken in the purpose built professional kitchen is different again , giving a different feel to Italian cooking whilst of course including fresh pasta and from antipasti to dolce , with lovely wines , lemoncello and various digestifes , all made here in this fine agriturismo. A long leisurely lunch follows giving enough time for that siesta before the evening wine and olive oil tasting.

Evening wine and olive oil tasting supper with Slow foods Johnny Madge. This is a fine end to the weekend in Johnny's beautiful wine bar. Built into the foundations of a Casperia Palazzo in the center of the village. A special atmosphere is created in his Cantina as Johnny explains about the wonderful Extra virgin olive oils that can be found in Sabina . Some of Italy's best are made here . All small production and made with love and a passion that can only be found in Italy. He will also take you on a whirlwind tour of some of Italys finest wines .

The idea of the evening and indeed all the lessons , is not to be scientific but to make your Italian cooking holiday great fun and a laugh and for sure it will end with a singsong !



MONDAY : Departure day for those here for the weekend or a free day for those staying for the 6 day cookery holiday.


TUESDAY : Third and final lesson of the week , where you will further develop your newly found skills and ideas .


WEDNESDAY : Departure day for those on the 6 day Cookery holiday. You are welcome to leave at whatever time is best for you. We don't have a throwing out time !










There are 2 airports in Rome , Fiumincino / Leonardo da Davinci is the main International airport , used by BA , Aer Lingus , Alitalia etc . Here inside the airport , you can take the excellent direct train upto our local station Poggio Mirteto Scalo for Casperia, and we would meet you there .

If you flew into Rome Ciampino with Ryanair or Easyjet , transfers can be arranged .




What's not included in your cooking holiday:

  • Any Flights
  • Insurance (compulsory, please provide details)
  • Car hire
  • Any entrance fees to museums, etc




Note: Anything paid for on the cooking holiday locally would be paid in Euros
